Moroccan Flavoured Lamb Kebabs
The story behind the dish
I absolutely love these kebabs and often make them as part of a bigger spread for a dinner party with lots of hungry guests. Add some pitta, a tabouleh and yoghurt and you're good to go!
The recipe
Moroccan Flavoured Lamb Kebabs
Ingredients
- 6 - 8 lamb steaks depending on size
- 2tbsp Middle Eastern Grill Blend
- 2 cloves garlic finely chopped
- salt and pepper to taste
- 1 lemon
- 12 skewers
- extra virgin olive oil
- 1 cup greek yoghurt
- small handful fresh mint
Method
- Cut the lamb into cubes
- Dry fry the spices until fragrant and the add to the lamb with a squeeze of lemon, salt and olive oil and give a good massage. Set aside
- Chop the mint and add to the yoghurt, season with black pepper
- Skewer the lamb pieces 4 -5 pieces per skewer
- Heat Frypan or BBQ to hot, add a little oil and place pitta into the frypan. Brown on both sides and drain on paper towels, then chop into pieces
- Now fry the lamb skewers in batches if necessary, Add a squeeze of lemon at the end of the cooking process
- Serve with Tabbouleh, yoghurt and pitta
